Tamarind is a hardwood tree known scientifically as Tamarindus indica. It's native to Africa but also grows in India, Pakistan and many other tropical regions. The tree produces bean-like pods filled with seeds surrounded by a fibrous pulp. The pulp of the young fruit is green and sour.  As it ripens, the juicy pulp becomes paste-like and more sweet-sour. 

The tamarind tree produces brown, pod-like fruits that contain a sweet, tangy pulp, which is used in cuisines around the world. The pulp is also used in traditional medicine and as a metal polish. The tree's wood can be used for woodworking and tamarind seed oil can be extracted from the seeds. Tamarind's tender young leaves are used in Indian cuisine. Because tamarind has multiple uses, it is cultivated around the world in tropical and subtropical zones.

Upon receiving your order, please inspect it for any damaged, lost, or missing items. If any part of your order is missing or damaged, please keep the items and packaging and contact us within 1 business day of receipt so we can find a solution for you. We may request pictures of the damage to help with this process.

There are rare occasions where our carriers may lose a shipment. In these situations, it is our highest priority to find your items and we will work with the carrier to do so. Traces with ground carriers take approximately 1-3 business days to complete. If your shipment is found, we will continue the delivery to your location. If it is deemed lost, we will work with you to provide a satisfactory resolution.

Ingredients

  • 15 dried tamarind pods
  • 2 quarts water
  • 1 cup granulated sugar
  1. Bring half the water to a boil in a large pot over high heat.

  2. While you are waiting for the water to boil, prepare the tamarind pods. Remove the brittle outer shell and pull off as many strings as you can. Discard the shell and strings.

  3. After the water comes to a rolling boil, remove it from the heat and place the inner portion of the tamarind and the sugar in the water. Let the tamarind soak for about 1 hour and 30 minutes.

  4. At this point, the water will have cooled down. Use your fingers to squeeze out the hard tamarind seeds and remove the remaining strings; discard them.

  5. Place the liquid and remaining pulp in a blender and process until the pulp is fully blended into the water.

  6. Run the liquid through a strainer, if you wish, or leave it pulpy.

  7. Pour your delicious agua de tamarindo into a pitcher, add the rest of the water, and refrigerate until cold.

  8. Serve over ice, if desired.
