Chile pepper pods are, technically, berries. When used fresh, they are most often prepared and eaten like a vegetable. Whole pods can be dried and then crushed or ground into chile powder that is used as a spice or seasoning. Chilies can be dried to prolong their shelf life. Chile peppers can also be preserved by brining, immersing the pods in oil, or by pickling.

The Pasilla chile or chile negro is the dried form of the Chilaca chili pepper, a long and narrow member of species Capsicum annuum. When the chilaca reaches that dark brown color, it’s picked and dried to create the pasilla chili. Named for its dark, wrinkled skin, it is a mild to hot, rich-flavored chile. As dried, it is generally 6 to 8 inches long and 1 to 1 ¹⁄₂ inches in diameter.

It is one of the most commonly used chiles in Mexican cuisine. The name Pasilla refers to the similarity, in both texture and smell, to pasas, or raisins. It has a meaty texture that thickens salsas, sauces, and stews very well.
